Three-in-one Freezer Cookies

I've been baking this recipe since I was a child.

I spent a lot of time in school holidays at my friends house and her Mum - Mrs Meek, use to bake these cookies, we would come home there after school and go straight to the Tupperware cookie container and I'd be so excited if she had made the choc chip ones, however if the sultana ones were there I'd be slightly disappointed.... lol. However they would still get eaten.

You could not stop at one!

This recipe has been a constant in my life through all my businesses.

I used to bake them and sell them at our local store when we lived in Broke in the Hunter Valley. Yes we were broke and lived in Broke, it was through these cookies and other cakes that I saved up enough money to build a café in Broke on our property, called "Café Stables" in 2002

.

This was the open day and we had the Major of Singleton Daniel Golenia, open it for us.

For the building, we got as much as we could for free, I de-nailed timbers for months, cleaned bricks from the mortar that was on them. We pulled down an old shed that a friend allowed us to have, that was built from large timber slabs, it was the most beautiful rustic building and still is, the new owners rent it out as a bnb now. Anyway try baking these cookies, you wont be disappointed they are delicious.

Chocolate Banana Cake Recipe-art

I've been making this recipe ever since I was 16yrs old.

I left school in 3rd form (yr 9) and went to Williams Business College, Mona Vale to become a secretary to work for my Mum & Dad at their Quarry in Belrose, Sydney.

My families quarry was called Warringah Gravel & Stone Supplies and after many arguments with my Mum because I didn't want to file, sweep floors and do the morning tea dishes I quit :) and got a job at The Chelsea Teahouse in Avalon on the Northern Beaches in 1985.

I worked there for only a few weeks when I found out it was for sale, so I had $4000 in savings and my sister gave me a loan for the remainder $12000 and I bought it. This is why I ended up becoming a chef.

This recipe came from Bronwyn, the previous owner. It was my most popular cake and I have made it ever since. I have continued to bake it in all my businesses after and that's why I thought I'd share my recipe, you'll love it!

How to Bake: Greek Almond Shortbread

This is one of my favourite recipes that I make all the time for my family. Its really easy to make and very adaptable as over the years with the ever changing needs of my family its a great recipe that you can adapt to gluten free and vegan if required. I hope you enjoy baking and eating them as much as I do!
